Il Fiore di Latte, the flower of the milk, as it is referred to by Italians, is fresh and tender, losing none of its moisture jet-setting across the Atlantic. The taste is silky and light, a world away from the Pollio of our youth. Buffalo milk yields a cheese with texture unlike all the rest.
