The legend, the myth, the cheese, Blue Stilton, is the king of cheeses.
The only British cheese to don its own trademark, true Blue Stilton is handmade in only three English counties. London aristocrats of the early 19th century favored the Blue Stilton. Keep the aristocracy alive, serve the Stilton after the sweet course, the port on the left, the Stilton to its right. To maintain your royal status among friends, slice with a Stilton server in neat wedges, instead of the silver scoop used by the original aristocrats.
Treat a Stilton like a fine red wine, serve at room temp to bring out the blue veins, creamy and unique, nut or fruit-like taste. Modern times call for Blue Stilton on a hot open sandwich, on top of salads, and melted in soups and sauces, like this, it is divine. Pour over steak or cutlets mixed with butter, brandy and nutmeg for a tantalizing spread.
