Made from the milk of the famous Manchega sheep, this cheese is similar to Manchego but rolled in rosemary. The herb compliments the cheese and draws out the complex flavors. As the cheese ages it picks up the aromas of the rosemary it contrasts nicely with the creaminess of the cheese. Try serving this with asparagus and pancetta, regular Manchego is too strong for this one, but the Manchego with rosemary is just perfect for a vegetable dish.
