Manchego is one of the most famous cheeses of Spain and hails from the same town as Don Quixote, La Mancha. Made from none other than Manchega sheep, Manchego is a firm cheese, with a mild taste, that often holds the aroma of the rocky grazing land of these sheep. Great with a robust red, and try with one of our quince pastes. Let’s not be sheepish about this one, Manchego is a blaaaaaast.
