Artisans still use the olivewood molds to create an indentation in the middle of the wheel. Tronchon is a mixed milk cheese, using the milk of both goats and sheep. It has a refined flavor with hints of wild herbs such as thyme, lavender and rosemary. Extra virgin olive oil perfectly adorns this cheese when served with green olives and crushed garlic and served as an appetizer.
