Ahhhh…, to graze on an abundance of grains free of fertilizers and pesticides in the open fields of the countryside of Holland. The life of this cow, raised with no antibiotics or hormones, is charmed, as is the result, a Gouda made with the milk of this cow. It is a firm, pale yellow cheese with scattered holes. Gouda provides a mild and creamy flavor, as a young cheese, and as it matures it becomes sharp and drier. Try serving as part of a cheese plate or slice on toasted bread for a sandwich. Enjoy with a big red or a Merlot.
